Butternut Squash Lovin'

On Saturday, my friends Amy, Shea and I ventured out into the cool, breezy Chicago day and enjoyed the Farmer's Market in Lincoln Park.  It was a lot of fun enjoying the smells, free sips of cider, samples of fried cheese and the italian doughnuts that were amazing!  

Another thing that was wonderful about this trip to the Market is that I was able to snag a butternut squash for cheeper than I would've at the grocery store...boo-yah!  So, I did what any sane person would do and that is: I bought it!  I also have an acorn squash at home so I didn't want to do the same old cinnamon, sugar, nutmeg business on both squashes so I decided to live a little and do something savory as opposed to sweet.  
Meet my garlicky friend, Mr. Garlicky Baked Butternut Squash.  He was easy to make (except for peeling the squash...what am I not doing right?  suggestions appreciated!) and I had all the ingredients at home (the fresh parsley was left over from my date with Paula)!  It was a no-brainer, Garlicky Baked Butternut Squash, I'd like for you to meet my stomach!

  1. Squash is one of my favorite things about fall! It gets a bad rap, but it is SO versatile! I love that you paired it with garlic here. Two of my fave flavors!

  2. This looks delish! I definitely want to give it a shot. And if you find out how to peel the squash let me know - I must be doing something wrong too, because it takes forever!
