Bon Appetit: Molasses Cookies

If you're from Lexington and you've ever been to a bridal shower or girl's sleep-over with Neile, then you know she makes the absolute best Molasses Cookies you've ever had (let's be real, they're probably the only Molasses Cookies you've ever had)!  Well, a couple of years ago I was at her house for some reason or another and she had made these remarkable cookies.  I had had them before and loved them and this time, I knew I HAD to get the recipe!  She sent me the recipe in an email and I just never got around to making the cookies (mainly because I never had molasses on hand...).  A couple of weeks ago I bought molasses to make pumpkin pie ice cream for my pumpkin fanatic husband and I had a ton left over.  As soon as I saw how much molasses I had left over from the ice cream, I knew I had to find that recipe in my email in-box.  I was elated when I found it and got to work making them.  They were SO good and chewy and uh! Ah-mazing!  Go make these and love them as much as I do :)


MOLASSES COOKIES
Beat together well:
1 egg
2 Tb. molasses
1 cup sugar
2/3 cup soft butter
1/4 tsp. ginger
1/4 tsp. salt
1/4 tsp. cinnamon
1 1/2 tsp. bkg. soda
Add in 2 cups sifted flour
***Refrigerate for at least 30 minutes so that you can easily work with the dough
Make 1" balls, roll in sugar.  Bake about 9 minutes @350 (don't let them get too done ... better when they're soft!)

  1. Yum! Molasses cookies are my all time favorite! I make several batches around Christmas and my family gobbles them up in no time. Even my young nieces and nephews love them. The are so chewy and delicious!
